So I am reducing the number of papers in my life. My huge accomplishment from yesterday was removing all of the paper from my car (which tends to act as my office and my filing cabinet) and burned what was not essential.  Very satisfactory.  While the task itself took about an hour, if you count all the time I’ve spent procrastinating, it took me at least a year to accomplish. 

In the pile of paper, I found this recipe, which is Copyrighted by the Food Network.com

Limoncello

2lbs very fresh lemons
1 quart grain alcohol (hence the drunkard)
6 cups of water
1.5 cups sugar.

Zest the lemons, no pith.  (That’s a lot of zest.) Put zest and alcohol in a jar and put it in a dark place for 3 days, taking it out at least twice a day to shake it.

When the zest is pale, all the oil has been extracted.  Strain the zest out of the alcohol.  Heat the water and sugar over low heat (in a pan, of course) until the sugar dissolves and the liquid is clear.  Let the sugar mixture cool and pour into the lemony alcohol.  Strain the liquid through a coffee filter and drink up!

And now that I’ve put the recipe here, I can throw the paper it was printed on away and declare another small victory for the day.
